That was unexpected




I had some leftover rotisserie chicken from yesterday, so I wanted to use it for dinner tonight. I went looking for good ideas, and casseroles seem to be the number one way to use up leftover chicken and turkey. I could have made our favorite chicken pot pie, but I was in the mood for something different.


John typically does not like casseroles. He's one of the original "meat-and-potatoes" kinda guy. So is my mom, come to think of it LOL. I thought I'd give it a shot anyway. Boy, am I glad I did!


Josh also joined us unexpectedly. He even tried it and said he really liked it. That might have been even more unexpected. It was a success, and I have to confess, I got out of bed to come down to put the leftovers of the casserole in the fridge. I left it out for a while to cool, and remembered just in the nick of time. I snuck a little bite - just to see if it was as good as I remembered. It was. This is going to be a new favorite for me. I wanted to add it to the cookbook as soon as possible so there was no chance of losing it. The original recipe came from The Cozy Cook (and you might notice I borrowed her photo until I can get my own) and I modified it just a bit as I went along according to my normal preparations.


Anyway, here it is. I hope you give it a try if, even if you don't think you like casseroles! This one is an unexpected keeper.
