Best Salsa Ever- Chevy's Copycat

There's only one salsa I'll go to the trouble and expense to get from a restaurant to take home and enjoy and that's the one from Chevy's :-)

I had to try a couple recipes before I found one that is a close enough copycat for me to use but it was worth the time and effort.  I can't always take the time to get it from Chevy's and, to be honest, I really needed to find a way to use the tomatoes that normally thrive in our garden.  I absolutely LOVE cilantro and this has a lot in it and fire-roasting the tomatoes and jalapenos is key - did I say KEY!!  Now you can even buy fire-roasted tomatoes.  I'm not sure they're a good substitute for doing it yourself on the grill but in the middle of February (isn't it over yet???) it may be as good as you can get.  Give it a try and see what you think.

6 medium tomatoes
6 to 10 jalapenos (chipotle peppers are even better - I found them in the market in the Mexican Food section of the produce department or you can smoke your own - here's the directions)
1/2 red onion
2 cloves garlic
2 TBS chopped fresh cilantro
2 TBS white vinegar
2 tsp kosher or sea salt
1 1/2 tsp liquid mesquite smoke

Clean and prepare tomatoes and jalapenos buy removing and stems and rubbing with oil generously.  Fire up the grill to high heat.  Roast tomatoes for 10 minutes, add jalapenos and continue roasting and turning gently until jalapenos are nearly completely blackened and tomatoes have a lot of black char and skins are falling off - they're done - remove them from fire and let cool.   Most recipes say to remove the blackened skin - I don't remove it all - I like the flavor it adds.  Add these and the remaining ingredients to food processor and puree - pulsing on high 5 to 10 seconds or until the texture is what you desire.

Place in covered container and chill for several hours or overnight so all the yummy flavors can marry up.  Serve with your favorite chips.  I love the thin crispy chips the restaurant serves but there are new "Cantina Style" available now in your local supermarket :-)  Enjoy!!
