Zucchini Bread
Beat together until well blended;
1 cup oil
2 cups sugar
3 eggs
1 teaspoon vanilla
In a separate bowl, combine;
3 cups flour
2 teaspoons cinnamon
1 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon baking powder
Add dry ingredients to the oil-sugar mixture and mix well. Batter will be thick.
Add;
2 cups grated and well-drained zucchini
1 cup raisins
1 cup nuts
Banana alternative:
Replace 1 cup of the zucchini with 1 cup well-ripened, mashed banana.
Optional streusel - combine 4 tablespoons cold butter, 1/4 cup flour, 1/4 cup sugar, 1 teaspoon cinnamon, chopped pecans with a pastry blender until crumbly and add to top of bread/muffins before baking. (I'm guessing at these amounts right now - I'll experiment and come back and update if needed)
Bake in a 9 x 5 greased loaf pan at 350 degrees approximately 1 hour and 15 minutes (less for muffins)
Allow to cool with pan turned on its side.
