Ingredients: 1 1/4 cup water; 1 T brown sugar; 1 1/4 tsp active dry yeast; 200 g sourdough discard, unfed and at room temperature; 4 cups all purpose flour; 2 tsp kosher salt; 4 T butter, melted; 10 cups water (approximately); 2/3 cup baking soda; 1 egg yolk and 1 T water beaten together to make egg wash; Course sea salt, kosher salt, or flaky salt

Such a delicious way to use up that sourdough discard. These are always requested and are a family favorite now. It uses active dry yeast in addition to the discard for the perfect classic pretzel texture.
