I am utterly convinced that the key to my chili is the Rotel Tomatoes.  I make good chili.  Our city hosts an annual Chili Cook-off and on several occasions now I have been told that if I would enter the contest with my chili - I. would. win. :-)  So there!

Rotel tomatoes are quite pricey.  We like to grow tomatoes and jalapenos so this seemed a natural thing to try canning myself.  It worked well!  The only problem?  I didn't can nearly enough to get me through the winter.  I ran out last week and it's early February.  Lesson learned.
