Name: Susie's Salad
Yield: 6-8
Ingredients: 2 bunches Romaine lettuce, chopped and washed; 1 large bunch scallions (green onions) washed and sliced; 1 cup shredded mozzarella cheese (*Provel alternatively); 1/2 cup shredded (not grated) Parmesan and/or Romano Cheese; 3/4 - 1 cup crispy cooked bacon, crumbled into bite-sized pieces; 3/4 cup apple cider vinegar; 1/4 cup water; 1 cup vegetable or canola oil; 3/4 cup sugar; 1 package dry Italian Salad Dressing

A very dear friend shared this with me after bringing it to a potluck. It was gobbled up quickly with everyone returning for seconds. It's quick and easy yet simply delicious!
